We did something similar on our St Louis Road Trip, though that was more of a journal to draw and write in than a scrapbook, and the idea grew from there.
Last year, I found a pack of 3 blank books in Target's dollar section. The kids got a Polaroid camera for their birthdays this year and I bought film for it in bulk on Amazon. We have enough Polaroid film for each of the kids to take a few instant pictures a day for their scrapbook. I packed some mounting squares, washi tape, and colored pencils -- forgot the scissors, so we had to grab some from a dollar store on Day 1. I purposefully wanted to keep the supplies simple and to a minimum. It just so happened that those books I grabbed over a year ago had exactly the right number of pages for the trip -- each day gets a 2-page spread. I got really lucky there!
When we get back in the car after a stop, the kids break out their supplies and get to work -- mounting their Polaroid pictures and ticket stubs, cutting brochures, drawing pictures and writing captions. They each have their own style and plan.

I love that it keeps them busy for a while without electronics and it will become a souvenir of the trip for each of them to look back on.
